Informar sobre los ale\u0301rgenos que contienen sus platos es la mejor apuesta para proteger a los comensales del consumo de alimentos a los que son ale\u0301rgicos, tanto por su bienestar como por su propia reputacio\u0301n. Pero&#8230;\u00bfExiste una legislacio\u0301n en materia de seguridad alimentaria que le obligue a ello? Asi\u0301 es. Veremos a continuacio\u0301n en que\u0301 consiste y cuales son sus puntos clave.<\/p>\n<\/div><div class=\"fusion-text fusion-text-2\"><p>El 25 de octubre de 2011, el Parlamento Europeo y el Consejo adoptaron el <strong>Reglamento (UE) 1169\/2011 sobre la informacio\u0301n alimentaria facilitada al consumidor<\/strong> (en lo sucesivo denominado \u00abel Reglamento IAC\u00bb). El Reglamento IAC modifica las disposiciones de etiquetado de los alimentos antes vigentes en la Unio\u0301n para permitir a los consumidores elegir con conocimiento de causa y utilizar los alimentos de forma segura.<\/p>\n<\/div><div class=\"fusion-text fusion-text-3\"><h3>6 top dudas sobre el Reglamento 1169\/2011<\/h3>\n<\/div><ul style=\"--awb-size:15px;--awb-line-height:25.5px;--awb-icon-width:25.5px;--awb-icon-height:25.5px;--awb-icon-margin:10.5px;--awb-content-margin:36px;--awb-circlecolor:#e9a825;--awb-circle-yes-font-size:13.2px;\" class=\"fusion-checklist fusion-checklist-1 fusion-checklist-default type-icons\"><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\"><i class=\"fusion-li-icon awb-icon-check\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\"><strong>\u00bfA quie\u0301n afecta la normativa?<\/strong><br \/>\nEsta normativa comunitaria afecta a todas las empresas operadoras de colectividades como: restaurantes, bares, cafeteri\u0301as, panaderi\u0301as, pasteleri\u0301as, heladeri\u0301as, caterings, comedores pu\u0301blicos (colegios, hospitales&#8230;), etc.<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\"><i class=\"fusion-li-icon awb-icon-check\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\">\n<p><strong>\u00bfSobre que\u0301 ale\u0301rgenos debe informarse?<\/strong><br \/>\nA pesar de que existen infinidad de sustancias o productos que puedan producir alergias o intolerancias, el Reglamento hace mencio\u0301n solo a 14 sustancias o productos (ale\u0301rgenos)1 que deben declararse cuando se utilizan como ingredientes en un alimento.<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\"><i class=\"fusion-li-icon awb-icon-check\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\">\n<p><strong>\u00bfComo se debe ofrecer la informacio\u0301n?<\/strong><br \/>\nHay varias maneras de facilitar la informacio\u0301n a los consumidores y las empresas alimentarias son libres de escoger el me\u0301todo ma\u0301s adecuado para su negocio. La informacio\u0301n se puede ofrecer de forma escrita u oral y, en este u\u0301ltimo caso, el operador debera\u0301 tener la informacio\u0301n disponible tambie\u0301n por medio escrito o electro\u0301nico.<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\"><i class=\"fusion-li-icon awb-icon-check\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\">\n<p><strong>\u00bfEs necesaria la formacio\u0301n del personal?<\/strong><br \/>\nSi\u0301, en todos los casos y para todos los manipuladores de alimentos. Todos los trabajadores\/as del establecimiento deben conocer las enfermedades, sus riesgos, la ley, sus obligaciones y los me\u0301todos de mantener bajo un riguroso control los ingredientes de cada plato<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\"><i class=\"fusion-li-icon awb-icon-check\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\">\n<p><strong>\u00bfSe puede alegar desconocimiento de la normativa?<\/strong><br \/>\nNo, el desconocimiento no es una excusa. El cambio en la legislacio\u0301n implica que no se puede alegar que se desconocen los ale\u0301rgenos incorporados como ingredientes en los alimentos que se suministran. Sin embargo, a veces no sera\u0301 posible evitar las contaminaciones cruzadas y las empresas pueden advertir, de manera voluntaria, de este riesgo. Es lo que se conoce como etiquetado de advertencia y habitualmente se efectu\u0301a mediante menciones del tipo \u201cPuede contener trazas de [ale\u0301rgeno]\u201d. El Reglamento IAC no prohi\u0301be el uso de estas expresiones, pero es decisio\u0301n voluntaria de las empresas la manera de hacerlo.<\/p>\n<\/div><\/li><li class=\"fusion-li-item\" style=\"\"><span class=\"icon-wrapper circle-yes\"><i class=\"fusion-li-icon awb-icon-check\" aria-hidden=\"true\"><\/i><\/span><div class=\"fusion-li-item-content\">\n<p><strong>\u00bfCuales son las consecuencias en caso de incumplimiento?<\/strong><br \/>\nDe la correcta aplicacio\u0301n de este Reglamento IAC depende la salud de miles de personas.
