El sistema inmune reacciona contra ciertas sustancias que esta\u0301n presentes en los alimentos y que reciben el nombre de ale\u0301rgenos. Los ale\u0301rgenos son sustancias (normalmente protei\u0301nas o glicoprotei\u0301nas) presentes en los alimentos, que estimulan el sistema inmunolo\u0301gico de algunas personas dando lugar a una respuesta inmunolo\u0301gica excesiva y, por consiguiente, a una reaccio\u0301n. Los si\u0301ntomas de una alergia pueden ser diversos (como congestio\u0301n nasal, picores&#8230;) pero, en algunos casos, pueden aparecer si\u0301ntomas ma\u0301s graves como asma, diarrea, co\u0301licos o \u2014 en casos ma\u0301s extremos\u2014 un choque anafila\u0301ctico.<\/p>\n<blockquote>\n<p>Las alergias alimentarias son reacciones inmunol\u00f3gicas que se pueden presentar desde los minutos hasta las 2-3 horas de haber comido el alimento en s\u00ed. Adem\u00e1s, una alergia alimentaria es capaz de costar la vida a una persona. En cambio, las intolerancias alimentarias son reacciones de nuestro organismo que rechazan un alimento por tener propia intolerancia o por no tener un estado de salud \u00f3ptimo. Las intolerancias dif\u00edcilmente pueden llegar a costar la vida de una persona.<\/p>\n<\/blockquote>\n<\/div><div class=\"fusion-text fusion-text-3\"><p>Las intolerancias alimentarias son reacciones adversas a los alimentos que se producen a causa de algu\u0301n tipo de alteracio\u0301n que impide digerir correctamente un alimento o alguno de sus componentes. Pueden tener una sintomatologi\u0301a similar a la de algunas alergias, tales como diarrea o dolor abdominal, pero en este caso no hay una intervencio\u0301n del sistema inmunitario y se asocian a algu\u0301n tipo de alteracio\u0301n que impide la correcta digestio\u0301n de un alimento o de alguno de sus componentes.<\/p>\n<p>Actualmente, las alergias e intolerancias alimentarias representan un desafi\u0301o que cualquier restaurante debe afrontar en su di\u0301a a di\u0301a, ya que existe un segmento especi\u0301fico de los consumidores que padece estas enfermedades alimenticias, las cuales llevan aparejada una restriccio\u0301n de los alimentos generadores de la reaccio\u0301n adversa (incluso eliminado hasta las pequen\u0303as trazas\/cantidades de estos alimentos). <\/p>\n<p>Por esto, los ale\u0301rgenos se han regulado en la Unio\u0301n Europea desde el an\u0303o 2005 y, actualmente, cabe destacar la vigencia de un marco regulador que promueve la proteccio\u0301n del consumidor a trave\u0301s de la instauracio\u0301n de una serie obligaciones informativas en materia de ale\u0301rgenos, el Reglamento UE 1169\/2011. De acuerdo con este, es obligatorio que las empresas alimentarias informen sobre la presencia de ingredientes ale\u0301rgenos en sus productos.<\/p>\n<\/div><div class=\"fusion-text fusion-text-4\"><p>En el a\u0301rea de la seguridad alimentaria, entendie\u0301ndose esta\u0301 como un concepto dina\u0301mico variable en el tiempo, muchas son las herramientas utilizadas para la gestio\u0301n mejorada de los ale\u0301rgenos.<\/p>\n<h3>Algunos ejemplos son:<\/h3>\n<\/div><ul style=\"--awb-size:15px;--awb-line-height:25.5px;--awb-icon-width:25.5px;--awb-icon-height:25.5px;--awb-icon-margin:10.5px;--awb-content-margin:36px;--awb-circlecolor:#e9a825;--awb-circle-yes-font-size:13.2px;\"
